Hi Diana,
Camera to camera is fine. Just let the recording camera keep rolling and it will have (a new) continuous timecode. It's a vanilla digital to digital transfer; quality will be the same.

That's a pro of FCP; one GUI independent of hardware. However, the pro of XDV is the seemless path to Avid online/finishing systems. Even XDV's color correction translates right into Symphony's. Just open he project up and redigitze and it's all there.
Automatic Duck has a product to facilitate FCP sequences to Avid, but it's not as thorough or robust as using any other Avid for the same task. It's more akin to opening an edl.

Try to forget how you do things in FCP, Premiere, etc... if you're doing any coaching. XDV runs on the "Avid Way" which is a different (but 11th generation) approach to NLEditing.
Get the newbie to go through the enclosed tutorial when you have the system up and running. I think this is a tough ball to get rolling for someone new to editing, but perhaps that might be an advantage to learning the system. Avid also sells a series of training books that are really well written if they are needed.
By the way, make sure to download the 3.5.3 updater. I'm not sure if you need the 3.5.2 updater installed first or not.
