Hello,
why you take actually not 2 Television?
That is always easier and cheaper and 2 laptops set up with this Firewire cable (which is where they should be longer sauteuer and rare) to cabling. Then you can Chich or conventional BNC video cable.

About the concert recordings and compilation is here in the forum already a lot has been written.
Any editing program that connects multiple video and audio tracks managed can be used.
