I'd like to create a submenu in which the user before the subtitle of the film anschauen enable / disable can. I have something actually seen on each DVD. How do I do it in Encore?

You may link to the corresponding button with the menu and change the dialogue box of the link properties the subtitle track.

Button with your right mouse button "link set" in the context menu. (or select button and press Ctrl-L).
In the drop down menu "Subtitle" in the dialog box that opens, the subtitle menu.
Depending on whether the film should start immediately, you need directly on the timeline control, or back again to the actual menu (which has no subtitles, but it remembers the choice anyway).
