that's quite simple:
In your submenu where you can select the sound that you have vermutl. 3 Buttons (1x DS, 1x stereo, 1x main menu).
Now, click on the right, each with sound-choice buttons, select "Set Link" and link to the same submenu. In addition, you choose from below with the corresponding audio soundtrack. So you should (if you have multiple timelines), such as the stereo track
always put in position 1 and the DS-channel is
always on track 2nd (or stop andersum, you just have to be consistent).
So if you then decide in this sub for Dolby Surround, which is
global to the whole DVD set. You can also with the third button to jump back into the normal main manu and can start the movie. The DVD "remembers" the setting.
Important: The DVD proceeds as only the audio track number. Not according to the language setting (en, de, etc.). Should it not give the corresponding trace in a timeline, the DVD automatically jumps to No. 1
Subtitles for the whole works in the same way.

This does not work in Encore. Even with Ifo Edit and Co. is very difficult to implement, because Encore tries to pack in all the menus to Hauptmenublock. But is synonymous IMHO unnecessary as offering only a small fraction of the remote control button for the Audiomenu. Normally it is handled as always purely on Menutaste.
