So next week I'm going to move up a MiniDV Camcorder (Pana. GS75 or 70)

- Here enough my normal onboard FW port, or it needs an extra ticket?

Your built-in Firewire port is sufficient.
Modern software Programs such as Magix, Adobe Premiere, and whatever their names to meet your needs.
You get the Liquid.Control example of Contour Jog Shuttle Pro V2 (or something similar), I have synonymous, and is a superfine thing.
The time to conversion of DV-AVi to DVD-MPEG2 depends, among other things, of the number of employed Effects. 1h times can be converted into 1 hour, sometimes it can take five hours. A standard approach do not exist here. But please first cut of the film and edit. Converting to MPEG2 quite done at the end.
