Your (DV -) video has 720 × 576 pixels. If you which inflates to 1024 × 768, it looks blurred. That is a fact.
If you want a sharp projecting video in 1024 × 768 using beamer on a screen, you have to make high-resolution video recordings. An affordable consumer HD format is HDV. Without such a camcorder will not do.
